Sodium dehydroacetate


Sodium dehydroacetate, also known as sodium dehydroacetate monohydrate, chemical name is 3 - (1-hydroxyethylene) - 6-methyl-1,2-pyran-2,4 (3H) - diketone sodium (3-acetyl-6-methyl-2-oxo-2H-pyran-4-olate; 2H-pyran-2,4 (3H) - dione. The molecular formula is C8H7NaO4. CAS 4418-26-2

White or near white crystalline powder, non-toxic and odorless. Soluble in water, glycerin, propylene glycol, slightly soluble in ethanol and acetone. Its aqueous solution did not change at 120 C and remained stable to be neutral or slightly alkaline after heating at 120 C for 2 hours. Light resistant and heat resistant, it can be used as preservatives, preservative insecticides, food additives.

Main uses

Sodium dehydroacetate is a new generation of food preservatives after sodium benzoate, Nipagin and potassium sorbate. It has a good inhibitory effect on mold, yeast and bacteria. It is widely used in the processing of beverage, food and feed. It can prolong the storage period and avoid the loss of mold. Its mechanism is to effectively penetrate into the cell body, inhibit the respiration of microorganisms, so as to achieve antisepsis, mold preservation and moisture preservation.

Sodium dehydroacetate has broad-spectrum antimicrobial ability, especially to mold and yeast. Sodium dehydroacetate has strong effect on yeast and mold which cause food spoilage. The effective inhibitory concentration is 0.05% - 0.1%, and the general dosage is 0.03% - 0.05%.

Mainly used for sufu, pickles, jam (maximum dosage 0.3g/Kg); soup, pastries and cheese, cream, margarine, etc. (maximum dosage 0.5g/Kg); in salted vegetables, the maximum dosage of 0.3g/Kg (see GBP70).

Sodium dehydroacetate is light-resistant and heat-resistant, and does not decompose and evaporate with water vapor during food processing.
